February 8th

Breakfast was an omelette with 2 eggs (140), diced ham (50), 2% cheddar cheese (90), tomatoes, and chives.  You don't get a picture of it, because my omelette-making skills are atrocious.  But it tasted good.  And I had lots of water with lemon.  Snack was a clementine (35).

Then I did an hour of yoga, and discovered my hamstrings are really tight.  Locust pose was pretty killer.

Lunch was a personal Mexican pizza, made with a flat-out wrap (100), fat free refried beans (100), 2% cheese (90), taco sauce (20), tomatoes, and red onions.  More lemon water.

Chris and I went for a 2 mile walk since it was almost 60 degrees outside.  C'mon spring!

Second snack was a 2% milk slice of american cheese and 4 wheat saltines (100).  Plus lemon water.

Dinner started off with a salad of lettuce, beets (30), and endive with Trader Joe's light champagne dressing (25).  I also had some chicken (up until the cat stole half of it when I wasn't paying attention, 60) and potatoes (90).  Aaaand lemon water.

Dessert was half of a bisquick strawberry shortcake made with light butter and 1% milk (130) with tru whip light (50) and a cup of strawberries (50). More lemon water.

Calories: 1160 vs. 1400
Water: SO MUCH.
Exercise: Yoga and walking.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
