January 4th

Yesterday I promised you the recipe for mini omelettes.  I got the recipe from Diana, who got it from a blog post called 3 Busy Girl Breakfasts.  I like the recipe because it's flexible--you choose your mix-ins to suit your taste.

  • Preheat the oven to 350 degrees, and generously grease a muffin tin.  And I mean GENEROUSLY GREASE, my friends.  As in, get some butter and a paper towel out.  Even with doing this, my omelettes still stuck a little.  I know Diana's didn't stick--I think she used silicone or paper baking cups.  TELL ME YOUR SECRETS, DIANA!
  • Chop your mix-ins, and fill 1/3 of each muffin tin.


  • Beat 8 eggs, and generously season with salt, pepper, or any other spices you'd like to use.  (I used 6 eggs and a pinch of s&p as directed, and neither was enough.)
  • Fill almost to the top, and bake for 18-20 minutes.

Taa daa!  Plus these reheat well in about 30 seconds.
Breakfast

  • A mini omelette with added cheese (100)
  • 2 slices center cut bacon, every trace of grease removed (60)
  • blueberries (45)
  • green tea with honey (30)
  • 2 glasses of lemon water


Lunch

  • Chicken Eugene (260 - I didn't finish the entire portion)
  • Brown Rice (160)
  • 3 glasses of water

Snack

  • Coffee with lots of 1% milk and just a little sugar (100)
  • Half an apple (50)

Dinner

  • Curried chicken salad (chicken, grapes, and celery with light mayo, salt, and curry powder) on wheat toast (245)
  • Pumpkin protein square with tru whip and cinnamon - that recipe is coming tomorrow! (100)
  • 3 glasses of water
Exercise
  • Fitsugar's 10 minute core workout
  • Fitsugar's 10 minute arms workout
  • 45 minute walk outside, and the clouds looked like pink and blue cotton candy!  (The two red dots are balloons advertising new construction for sale.)
  • Then 15 minutes of exercise bike riding in socks, because I had a blister

1150 vs. goal of 1400, which is weird, because I never felt hungry.  I also should have eaten more vegetables.  I'll work on that tomorrow.

My hilarious friends Kelley and Christopher invited me over for the Oscars so that we could judge red carpet looks.
