Before we get to yesterday's eating excitement, a couple of my fabulous readers have asked where I get my recipes.  I have listed my favorite (and not-so-favorite) sites below.

Spinach Lasagna Rolls-good for freezing.  Use canned sauce if you're in a hurry.  Be sure to salt/pepper the cheese mixture well.
Corn Salsa with Lime-great as a salsa (duh) and really good as a topping for chicken or fish.
Pumpkin Cupcakes-without the frosting, they're muffins!  And they're delicious!

15 Minute Stacked Tostadas-So good and easy!  I made them twice this week.
Mac & Cheese Muffins-They freeze really well and are good portion control.
Skinny spinach macaroni in muffin pan.  You could probably make this a little bit healthier by using light butter and wheat flour.

Honorable mentions go to EpicuriousFood NetworkPinterest (try the health board instead of the food board), and All Recipes, where it is possible to find healthy things, you just have to pay attention.  I am of the opinion that one should never eat anything that Dr. Oz, Rachael Ray, or HungryGirl recommends.  (To me, Hungry Girl is like a third rate Skinnytaste.)

Breakfast was half an apple, some peanut butter yogurt dip, a glass of water and a cup of hot tea.  Total: 2 points

Then it was off to physical therapy, which was 45 minutes of resistance training and such.

Lunch was a Mediterranean Wrap and a side of fruit from Jason's Deli, and two glasses of water.  Total: 9 points

Then I went to the gym at work and did 20 minutes on the exercise bike and five minutes of weight lifting, focusing on my arms.  I also had a glass of water. Snack was a tangerine, 12 chocolate chips, and a glass of water.  Total: 1 point

After I got home, I had some hot chocolate, 'cause baby it's cold outside!  Total: 2 points

Dinner was two ounces of grilled chicken, a spinach and roasted beet salad with olive oil and sauteed goat cheese.  And then strawberry shortcake for dessert, made with Heart Smart Bisquick.  Total: 11 points

Whole Grains: yes, whole wheat wrap

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
