Day 67

Ahh, Monday holidays.  The reason that extra weekly points were invented!

I spent most of the day in the kitchen.  Taking recipe advice from the internet, I made little baby pumpkin muffins (1 box of white cake mix, 1 can of pumpkin, 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg--325 degrees for 15 minutes).  They were super tasty.  Plus, only one point per mini muffin, or three points if you have two.  I had them with two cups of milk to get my protein/dairy in.  Total: 7 delicious points
I had to freeze most of these to stop myself from eating them.
Speaking of pumpkin, here's how I feel about September/October/November, in general:
We planned a really healthy lunch because we knew dinner was going to involve steaks and cupcakes.  I tried a new recipe from Eating Well for Shrimp & Plum Kebabs, expertly grilled by Chris.  It sounded kinda weird, but the reviews were good, and it was delicious, if not slightly time intensive.  I also made Skinnytaste's Corn Salsa, and had that with eleven tortilla chips.  Total: 9 points

Then we headed to the Walkers to belatedly celebrate Chris' mom's birthday.  We brought the steaks (from Lothar, of course) and the basil orzo, because Joyce really likes it.  I use canola oil instead of butter, part-skim mozzarella, and whole wheat orzo to make it healthier.  Chris brought the Lemon Cupcakes with Blackberry Buttercream. (Note to self: figure out how to make them not 11 points each.)  Ray grilled the steaks, as well as some veggie kabobs with olive oil, baked potatoes and rolls. 

Even though I used lots of points, I used lots of restraint:

  • I cut my steak and took half home.
  • I did the same thing with my giant baked potato and used sour cream (no butter).
  • In fact, I didn't even eat any orzo so I could use points on the potato.
  • I avoided the bread entirely, even though it looked SO good.
  • I cut the cupcake in half and split it with Chris.
  • When I wanted more steak/potatoes/bread, I just ate more veggies. SO MANY VEGGIES.
  • I drank water (two cups).
Total: 22 points

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
