Day 39

Today was weigh-in day.  Verdict?  3.4 pounds lost this week, with 24 pounds to go!

Things are a little challenging right now, which makes being healthy difficult. I know that "things are challenging" is vague, so I encourage you to come up with hilarious scenarios in your mind. 
  • Maybe I lost my most expensive Kate Middleton doll and/or tiara (okay, I actually only have one of each). 
  • Maybe I discovered that chia seeds make you grow an extra toe and I can't squeeze my feet in my favorite high heel wedges.  
  • Maybe I'm pretty upset that Michael Phelps is kind of phoning it in so far during the Olympics.  

  • The reason doesn't really matter--what matters is managing stress in a way that's healthy, because there is always going to be stress.

So this week I'm focusing on mental well-being.  To help with that, I have yoga, massage, and volunteering lined up for the week.  I'm also going to post about one thing each day for which I am thankful.  I have had friends do this, and they have said it really helps them.  In addition, I'm rebooting the "3,500 calories for a purse" challenge, but giving myself nine days (including two weekends) because that's more realistic.


Okay, so on to yesterday:


Lunch was eight chicken nuggets and 2 glasses of water.  Snack was a cup of skim milk.  Dinner was 3 ounces of chicken, plus an awesome salad of 1 cup lettuce, 1/2 cup beets that I roasted myself, 1 1/2 ounces of goat cheese, and 2 teaspoons of olive oil, plus another cup of skim milk and 2 more glasses of water.

Exercise was outdoor walking and yoga.  Total?  200 calories, 3300 left to go.


And finally, today I'm thankful for... Chris.  People that don't know both of us are usually surprised when I tell them that he's funnier than I am.  (And yes, it is frequently a sarcastic laugh riot around our house.)  He's good at all the things I'm not--dealing with anything electronic, not taking things personally, map reading.  But more than that, we make a really good team. We are often at our best when things go wrong, like a modern day Batman and Catwoman, just minus the cool outfits.  And I'm pretty stoked that next year I get to be Mrs. Brown, and spend the rest of my life annoying my best friend. : )


Added bonus?  He's hot.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
