Day 26

Sunday went fairly well!


Breakfast was a hard boiled egg, a cup of watermelon, and four glasses of water.  I had measured out a half cup of blueberries too, but I wasn't really hungry once I ate the other food, so I put them back in the fridge.  Success!  Then, I needed a few things from the grocery store, so I walked there.  30 minutes of cardio, people!  More success!


Lunch was at my mom and dad's to celebrate Amy's birthday.  Look at this rainbow-licious plate!  


I had watermelon, blueberries, green beans, yellow and red tomatoes, ham, two glasses of water and only about three bites of mac and cheese.  My mom also cut me a really small piece of ice cream cake, that was also only about three bites.  I successfully avoided the butter and biscuits.  I do have to say that I'm fortunate that both my parents/family and my future in-laws are very supportive about my healthy eating. :)


Speaking of future in-laws, we went to Joyce and Ray's for dinner.  Chris' mom had bought all the stuff for yummy chicken fajitas, but Chris managed to talk everyone in to burrito bowls.  So I tried to keep it healthy with rice, black beans, barbacoa, three salsas, lettuce, and sour cream.  I also had 10 chips, and 2 more glasses of water.

In the middle of the family festivals, we stopped by my Aunt Sue and Uncle Jerry's new house because it was also my cousin Josh's birthday celebration.  Even though my aunt is an AMAZING baker, I successfully steered clear of the apple pie, deviled eggs, bbq, potato chips, etc.  She was very nice and cut more cucumbers for me when I ate all of them off the relish tray.  I also had exactly one mini chip and one bite of 7 layer dip.


After a fun day in Manassas, Chris and I came home and went for another 30 minute walk, which brings the grand total of Actual Real Cardio up to an hour today!


Snack time was one ounce of cheese (I measured), 4 tootsie rolls, and a tablespoon (again, I measured) of chocolate chips.  Also 2 more glasses of water.

I did a good job of measuring my food at breakfast and snack time today, but the rest was challenging since I wasn't at home.  Lunch was mostly fruits and veggies, so I'm okay with not measuring those.  And I asked the nice people at Chipotle to go easy on the rice, and I counted my chips.  I'm most proud of the fact that I had the opportunity to eat tons of unhealthy stuff today but didn't.  Yay!


Also, final water count was 10 glasses.  The duchess of Cambridge is impressed.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
