Day 21

Even though I had promised myself I would only get on the scale once a week, I stupidly weighed myself this morning.  And EFFfffffffffffff!  How do you gain 2 1/2 pounds overnight?! Whatever, scale.  I'm done with you until Sunday.


Breakfast was the usual chex and skim milk.  Lunch was tomatoes & cucumbers in lemon olive oil, blueberries, a piece of grilled cilantro chicken from Whole Foods, and I also picked up these weird little cheese things.  For only 3 ounces, they have 5 grams of protein.  I ate one, and Coworker Kelly ate one, and we were very confused.  They tasted like really sweet, smooth yogurt.  Not like cheese.  Coworker Kate did some internet research for us and confirmed that they are indeed cheese.  So that's...something.  What are you, weird little cheeses?

For snack I had 2 pieces of chocolate and some pretzels and hummus.  Then it was off to Okra's to see Debbie and Greg and pick up the giant bottle of lemon olive oil that they procured for me.  Since it was dinner with friends, that meant that I got to eat whatever I wanted!  Mwah ha ha!  I still did okay.  I had a few crawfish bites, but I stuck to unsweetened iced tea.  I also had half of a po' boy, but I had salad with balsamic too.  And then a cupcake that was so sweet, I can still feel sugar coursing through my veins.


Debbie wanted to know if I was going to post about dinner even though it was mostly unhealthy, and the answer is yes, yes I am.  I am also going to post this picture of her, in her natural habitat.


And THIS is why we're best friends.
So, for goals this week:
Water? Yep, over 12 glasses.
Cardio? Nope, but I wasn't planning on it today anyway.
Planning?  Yes, considering that we had planned to go out to dinner.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
