I know, I know, I owe you a Grammy update, an SNL update, and a Krispy Kreme update.  Patience, my friends.  Here's what I ate yesterday:

Breakfast was Ezekiel bread (80) with light butter and canola oil (25), half an apple (33), an egg (77), green tea, and water.  In fact, the air was so dry that I drank fourteen glasses of water yesterday.  Fourteen!!

Lunch was a homemade Mexican pizza on a flat-out wrap (90), with fat-free refried beans (100), 2% cheddar cheese (90), taco sauce (20), tomatoes (11), and red onion (2).  I also had a quarter of an avocado (80) and another half of a tomato (11).

Exercise was 35 minutes of yoga and 45 minutes of cardio/weight lifting at the gym.  I am sore.

Snack was half of a black bean brownie (72) and a cup of skim milk (86).  I love that these brownies freeze well and defrost really fast in the microwave.

Dinner was chili, courtesy of Chris (316) with wheat Saltines, courtesy of Nabisco (120) with a salad of lettuce (7), tomatoes (12), beets (19),  and goat cheese (19 - I didn't eat all of what was pictured).

Total: 1270 vs. 1400 calories
Water: 14 glasses
Exercise: yes!

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...

I've shared this advice over the years, most recently when a number of friends & colleagues found themselves hunting for jobs.
