An exercise in restraint

Before we begin, happy birthday to Amy!  I hope your day was as fabulous as the Duchess of Cambridge and as over-the-top as Johnny Weir.  I hear there was a big celebration in Germany today--I can only assume that it was in your honor.


Since I knew I'd be heading to my mom & dad's house for Amy's birthday lunch, I tried to have a protein-y breakfast.
  • Hard boiled egg (75)
  • Blueberries (40)
  • 2 glasses of water
Maybe I should have had more hard boiled eggs, because I was starving by lunch.  I do want to point out that I piled on the green beans, potatoes, and ham, and showed MAJOR restraint in the mac & cheese, biscuit, and cake departments.  Seriously, I wanted to eat it all.
  • Cup of green beans (30)
  • Sliced tomatoes (20)
  • 5 ounces of ham (200)
  • Mac & cheese (210)
  • A third of a reduced-fat biscuit (50)
  • Ice cream cake (250)
  • 2 glasses of water
Get in my mouth, ice cream cake.
After departing Manassas, we stopped by Trader Joe's, where we grabbed some things for snack.  Chris was unfortunately not a fan of the guacamole.  But I loved the spinach & kale dip!  If you're a fan of water chestnuts, you'll like it.
  • 6 whole wheat mini pitas (120)
  • Trader Joe's Spinach, Kale & Greek Yogurt Dip (60)
  • 4 glasses of water with lemon
People from the internet told me that this dip is delicious.
They are correct.  It only has 30 calories per serving!
Then we cleaned the house.  We are exciting, yes?  For dinner, Chris grilled some flank steak, and I made the mashed cauliflower.  I LOVE mashed cauliflower, because it gives me most of the taste of baked potatoes/mashed potatoes, but without a lot of calories.
  • Flank steak (200)
  • Mashed cauliflower (40) - Tastes like mashed potatoes!  I only use 1 oz of cream cheese
  • Salad with tomato, cucumber, carrots, and light champagne dressing (45)
  • A slice of Ezekiel bread (80) - Thanks, Bread Jesus!
  • 2 glasses of water with lemon

Final snack involved walking to the grocery store for some Tru Whip Light, and baking up some pumpkin squares.
Calories: 1495 out of 1400.  I'm okay with this.
Water: 12 out of 8!  Yeah!

Planned for tomorrow: Lunch is packed, breakfast is planned

Even Kate agrees that ice cream cake is the way to go.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
