Camilla, already...

Wow, Day 2 and we've already had a Camilla Moment!



Confession: I posted last night, went to bed, laid there for an hour, and then got up and ate hummus, tomatoes, and pretzels.  I don't feel bad about the midnight snack--I really was hungry.  I do feel bad about the fact that I have no restraint with hummus (140?), but I did okay with the pretzels (150) and the tomatoes (50).

I had only driven twice in the past two weeks (once to get my hair done for Amy's wedding, once in Orlando on the way back from dinner), so this morning I felt like I was 16 again while driving to work

Fortunately (?) I made it to work fine, and then began the exciting process of reading a bajillion e-mails, catching up with coworkers, and doing the mother of all expense reports.

Breakfast was a banana (105) and some almond butter (80), along with two cups of water and a cup of coffee with cream and sugar (50).

Lunch was leftover Skinnytaste pasta salad, which I hope you like hearing about it, because I have 4 servings left of it! (115), 3 ounces of turkey (115), and a small Greek yogurt (100) plus 2 glasses of water.  To keep the turkey situation from getting boring, I got some spicy jerk turkey from the deli counter at Harris Teeter.  It's delicious--you should try it.



And then my super awesome team surprised me with a card and a cake for passing the SPHR since it was my first day back in the office.  Second confession: I did not eat a piece of my own congratulations cake.  I was saving it to have a bite or two later, but then I got a killer headache.  But I totally appreciate the sentiment!  And my peeps got to eat cake, which made them happy!


Dinner was a bowl of whole grain penne (200) with homemade marinara sauce (65) made with love and tomatoes by Chris.  That Chris Brown, he's a good man.  I also had a salad of lettuce (5), tomatoes (20), oil, and vinegar (40), and two more glasses of water.


In summary:
Calories (goal is 1400): 1235, including the midnight snack last night
Water (goal is 8): 6, but I'm going to go fix that RIGHT NOW
Exercise: I was gone for 13+ hours today at work, and I am exhausted.  Tomorrow.

We'll give it a Sophie wearing this combination of a pretty turkey and a wicker chair.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
