September - Week 1

For better or for worse, you're going to have to hear about what I eat for the next 25 days.  I know this inspires some of you (yay!) and if it doesn't, then maybe just look at the pictures.  I'm going on a trip that involves lots of walking, stairs, and pools, so my goals this month are:

  • Do 100 squats every. single. day.  I'm using this video but if you want to play along at home, you can also do 100 squats of your choosing. 
    Warning: if you do the video, these aren't regular squats.  There are jump squats, plie squats, squats w/ leg raises, roundabout squats, squats w/ reverse lifts, triple dip squats, sumo squats w/ high kicks, side squats, and double dip ski squats.  But the whole thing only takes 8 mins!
  • Do yoga every day.  Because stress.  I like the YouTube channel Yoga with Kassandra.
  • Walk 3x per week.
  • Add in arms & abs on week 2.  This is week 1.

Monday

  • Breakfast - Coffee with vanilla soy milk.  I know I should eat more breakfast, but I'm honestly not that hungry in the morning.  The milk (and I use a third of a cup) has protein, and coffee curbs my appetite.
  • Lunch - Copycat Taco Bell burrito that's a bajillion times healthier using this filling recipe (hope you like cumin!) and this sauce recipe, plus some mango on the side.  I went easy on the cheese, used a carb counter tortilla, and of course, fat-free refried beans.
  • 1st Snack - Cucumbers, tomatoes, and bell pepper strips, Onion dip
  • Dinner - Pan roasted cod, Corn salsa with lime (I used canned corn to save time), roasted asparagus, and 1 Hershey kiss (I prefer dark chocolate, but I have some in the house that were given to me, so I'm eating them.)
  • 2nd Second Snack - 1 oz reduced fat cheddar cheese, 6 Triscuits, 1 apple
  • Exercise - 100 squats.  I felt kind of blah so I skipped the rest.

Tuesday

  • Breakfast - Coffee with vanilla soy milk and a hard boiled egg
  • Lunch - 8 Chick-fil-a with buffalo sauce, a salad with light Italian dressing instead of fries, and a donation to PFLAG. 
    Note: while they've come a loooong way by listening to the community and engaging in meaningful dialogue, Chick-fil-a's historic anti-LGBT stance (and the fact that people expressly eat there because they're anti-LGBT) bothers me, so I donate an equal amount to either PFLAG or The Trevor Project  for every dollar I spend.
  • Dinner - Pasta with turkey sausage and a salad
  • Snack - Hot green tea
  • Exercise - 100 squats and 30 minutes of yoga.
Fun fact: The organist for the Atlanta Braves has been trolling Cubs player Daniel Murphy for his homophobic remarks by playing Born this Way, Lola, and What the World Needs Now is Love during has at bats.  Heh.
Wednesday
  • Breakfast - Coffee with vanilla soy milk
  • Lunch - A turkey sammich on wheat with an entire tomato, a suggestion of light mayo, mustard, and salt & pepper, plus a clementine
  • Dinner - Onion meatballs made with lean ground beef, brown rice, and green beans
  • Snack - Hot green tea
  • Exercise - 100 squats and 30 mins of yoga

Thursday

  • Breakfast - Coffee with vanilla soy milk and two hard boiled eggs
  • Lunch - Leftover turkey sausage and shells with a clementine
  • Dinner - Went to a tequila bar and only had water!  And a grilled chicken salad!  And took it pretty easy on the chips and salsa!
  • Snack -  Green tea, yellow pepper strips and onion dip
  • Exercise - 100 squats and 40 mins of yoga
We don't let the cats near the food.  But I had some green tea on a tray in front of the sofa.  Walked away from it, and Beast decided to take an uncomfortable nap.  And yes, the teabag holder is cat shaped.

Friday
  • Breakfast - Coffee with vanilla soy milk
  • Lunch - Spicy tuna sushi wrapped in avocado, plus a side salad
  • Dinner - Pan roasted cod, mashed potatoes, asparagus, and 2 Hershey kisses
  • Snack - Hot green tea, popcorn without butter
  • Exercise - 100 squats 
Another fun fact: I just call the sushi place now and say "hey, it's Alyssa."  They have my rolls ready in 15 mins.  It's officially called a Rock 'N Roll but I don't know why.  They one time had a Spongebob Squarepants Roll that was crab, squid, and pineapple, which I did not eat but thought was funny.
Saturday
  • Breakfast - Coffee with vanilla soy milk
  • Lunch - Leftover turkey sausage and shells with an apple
  • Dinner - Edamame and spicy chicken noodles from Big Bowl
  • Snack - Hot green tea
  • Exercise - 100 squats and 45 minutes of yoga
Weird fortune cookie situation: my friend Steve got the fortune A single candle cannot put out all the darkness in the world.  Um, that's depressing.  I think the fortune teller writer meant to say All the darkness in the world cannot extinguish a single candle.  Get it together, Big Bowl Fortune Teller Writer!
Sunday
  • Breakfast - Coffee with vanilla soy milk
  • Lunch - Chicken Lettuce wraps, recipe courtesy of Hot Jewish Lawyer, who made these last week with great success.  She added 2 peppers and shredded carrots and so did I.  I also omitted the salt because the soy sauce has so much.
    Also, note to other blog writers: just put the recipe first, and then put all your thoughts about your life.  I had to scroll down past your explanation of how to cook chicken and WHAT LETTUCE IS to get to the point.
  • Dinner - Is going to be football watching food!  Slow cooker veggie chili (I added a jalapeno and 1/2 tsp red pepper because we like spice--will let you know how it turns out) and skinny buffalo dip  (which I've had before and is hella yummy) with peppers/cucumber/celery dippers.
  • Snack - Hot green tea, and then later might have an apple and popcorn or Triscuits
  • Exercise - 100 squats and some yoga.  I decided I needed to stop making excuses about not walking (too hot, too rainy) so I put on a water-resistant jacket and walked in the rain for 40 minutes.  Taa daa!

Even though I didn't get the walking in that I wanted this week, I did do lots of yoga, allllll the squats, and ate really healthy.  We'll give it a Kate!  In fact, we'll give it most of the Royal Family.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...

I've shared this advice over the years, most recently when a number of friends & colleagues found themselves hunting for jobs.
