Days 229 & 230

Day 229 - Monday

I started a science fair project this week called "What Happens When Working While Jetlagged?"
Note to whoever did this project: the answer is yes.
Note to everyone else: I am judging an actual Science Fair next week.  Really.
On Monday, I was tired and clumsy and spilled a giant cup of water all over everything on my desk.  Once I got done staring at the puddle, a coworker helped me clean it up with tissues (the ones I keep around for all the crying people) and further assisted in spreading all of my soaked-yet-important documents out on the floor to dry.  Your HR Department at work.

I didn't eat anything for breakfast, because at 8 a.m., my body thought it was 2 a.m.  I did have lotsa water though!  Lunch was half of a homemade wrap (whole wheat tortilla (80), deli turkey (50), light cream cheese (30), olives (15), green chilies (10)), a quarter cup of grapes (25), a half cup of carrots (25), and two tablespoons of hummus (50).

Snack was a cup of coffee (50 for cream and sugar), half an apple (95), and some yogurt & smart balance peanut butter dip (65 for the yogurt and 65 for the peanut butter).

Dinner was a leftover chicken soft taco and an attempt to stay awake until 8:30 (160 for the tortilla, 100 for the turkey, 10 for the tomatoes, 15 for fat free sour cream).  And then I laid in bed until 2 a.m., when I woke up and ate two pumpkin protein squares (100), light whipped topping (50), four wheat crackers (60), and a slice of reduced fat cheese (50).  Don't judge, my body thought it was 8 p.m.
This is what I'd look like if I was blonde, wore makeup to bed, had an old school alarm clock, and would be caught dead in pale pink (it looks HIDEOUS on me).
You're probably also asking what Truwhip is.  It's Cool Whip, but it's 70% organic, and has no GMOs, corn syrup, and no hydrogenated oils or trans fats (I know, I KNOW--really, Cool Whip?).  Also, Oprah likes it, which I can't decide if that's a good thing or not.

And I rode the exercise bike for 30 minutes.  Yaaaaaaay....zzzzzzz.

Total: 1105/1400 calories.  I wasn't trying to eat less, I was just tired.

Day 230 - Tuesday
I couldn't even tell you what happened Tuesday morning.  Absolutely no idea.  Aren't you happy you're sharing the road with me?  I don't think I ate breakfast.

I apparently did drink some coffee, because there was a half empty mug on my desk this morning (25 for cream and sugar).


Okay, so lunch was a little bit of leftover roasty (200) and whole grain noodles (90), half an apple (95), and yogurt & peanut butter dip (65 for the yogurt and 65 for the peanut butter).  Boring.  But dinner was more exciting because of....vegetables!

Every week we leave this red bag outside, and From the Farmer comes and gives us more for $35.  Given what we'd pay in gas to get to the Winter Farmer's Market, this makes sense.

This week in the basket we got all local apple cider (we've had local pickles in the past and they were adorable), red onions, brussel sprouts, sunflower sprouts (yes, really--local!), spaghetti sauce, red & yellow cherry tomatoes, and red oak lettuce, which is not pictured, because it took up the rest of the basket.

From the Farmer e-mails recipes in case you haven't tried a certain vegetable before.  We had never eaten spaghetti squash, and I had seen a recipe on Skinnytaste.  It was super delicious, very easy to make, and tasted like spaghetti!  For only 165 calories!  Yay!

We also had the chicken from Skinnytaste's Chicken Parm (240 points).  For 'dessert,' I had a half cup of strawberries (25) and more Truwhip Light (50).  And then did 10 minutes of weight lifting (stop laughing, I'm exhausted) and then went to bed at a semi-reasonable hour, which might have been 8:30 or 11, I honestly don't remember.  Good thing grad school started back up today.  This should go well. ;)

1020/1400  Again, not trying to deprive myself, just sleepy.  Speaking of which: bed, now.

Freezer Meal #1 - Cheesy Shells and Italian Sausage

A month ago, a coworker invited me to a Pampered Chef Freezer Meal party.  I will admit that I went in to it with a little bit of an attitude: " I'm going to have to buy all their seasonings and the meals will be full of processed goo and not taste great ."   Four hours of fun, three glasses of wine, $170 for groceries and seasonings, and 14 meals later, I was happily proved (mostly) wrong.  Here's how my thinking changed: 1) I'm going to have to buy all of their seasonings - well, yes.  This is a service they're offering after all, and I felt like the $70 was more than worth the ideas and ingredients I got, plus not having to do the dishes and getting a free dinner was a bonus!  I discovered a few ingredients I would have normally given the "side eye" to, like cherry balsamic vinegar, which costs the same at the grocery store as it does from The Pampered Chef. 2) The meals will be processed - I was expecting lots of Cream-of-Something-Soup r...
